one option: only ever give out your e-mail address with a "+[domain or service you're signing up for]", ex. signing up for a HN account? kevin+hn@your-domain.com.

Then filter out any e-mails that don't have that +[whatever] in. No, not a panacea. But can cut down a bit on spam.

A fun side effect is you can see where the spammers get your email. Sometimes a company has a DB leak and the emails are all over the dark web.
