for Apple: because you can't on iOS, the NFC API doesn't allow it.

I would assume more generally, the stock integration might be nicer and as long as the terms from Apple/Google are nice enough, why wouldn't they?

Google has done a terrible execution in my country. You could use google pay but the app to choose or add a card wasnt available.
