I'm not sure if there's an option to turn this off, but even if there isn't, since it's Java Edition, a mod could easily be created to turn it off anyway.

It is still quite frustrating that it has come to the point that you may need to mod a game you purchased to avoid telemetry.

I don't really mind this. There is no impact to me by having this telemetry in place.
