I could be wrong, but I watched a test flight of Starship a few weeks ago that didn't explode. Am I crazy?

All have exploded, the one you are likely thinking of had a hard landing and exploded several minutes after touch down.

SN-15 is getting it's raptors currently, so this could change very soon. The main issue is the engines and some issues they need to work out there. Overall the hull will be ready before the engines.
