Stupid question:

Does dedicated NAS have any advantages for power user? Buy some cheap Ryzen box, stuff it with harddrives, install Centos and forget about it....

For engineers with enough time (and able to do troubleshooting), no, no advantages.

For everyone else, they do have advantage, most thing you wanted is 1 click away, including something tedious for average "power users", like "using btrfs safely with RAID-5-like disk array" (so that you can take a snapshot of your drive) mentioned here.

Electrical power consumption is a point worth looking at.
It's actually very user friendly.. You can buy a DSM license to install on a normal machine

Do you have a link to a licence sales page?

I'm quite positive I've seen it for custom hardware.. but it seems VDSM is only available (officially) for Synology devices.
