I'm looking to do exactly this as a sideline, but don't know of any examples. It probably depends on your definition of profitable but it must exist.

I'm also assuming that at some point of being profitable anyone who achieved this would quickly hire at least one or two people to help provide technical support coverage.

I ran a one person B2B business for three years profitably, but the product wasn't software. I did write my own software in order to make it possible to run it as a one person business though.
