So what should we be using instead of elasticsearch for logs? To mitigate that licensing risk?

We're using Grafana and Loki to great effect.
Using an AGPL-licensed fork does not suffer from this risk.
ClickHouse. It's Apache 2.0 and will stay that way.

Loki and grafana are great, use it on all my clients eks clusters.

...if it matches your use case, you'll find it trivially outperforms elasticsearch.

Search speed is not the most important aspect at play here.
