What about looking at employment history: types of companies, position, length, languages used... the basics..

That looks good in a conversation but under scrutiny, unless you know someone in a company mentioned, all you get is an opinion or you need to do a deep economic check of the company in question, which is nothing more than a statistic at best.
Why would you need to put so much judgement into a single company. If the person has only worked for one company than their employment history won't be much of a factor.

If someone has worked at 6-8 places over 15/20 years covering a range of skills required I don't see the risk.
