I think one of the reasons people don't really value "enterprise stability" is because it is mostly a myth.

Agreed. The reason is more "we are running supported software in a supported combination of hardware, OS and application". That's what auditors are looking for. I've yet to see a real benefit beyond the paperwork advantage.
