Do you know if any restaurant or franchise replicated Uber / Lyft, or Amazon Go simplicity of payment by asking poeple to scan their phone to avoid having to deal with payments at the end of the meal ? One could just scan his phone, sits, order, eat then leave. He will his receive his bill on his phone and can tip on the app. Is that something doable ?

This is common in China, where paying meals using QR code + WeChat seems to be pretty much standard.
Paying with QR codes requires scanning the code on the restaurant receipt, which then implies that at end of the meal or beginning, depending on the type of restaurant, there was a bill exchanged between customer and restaurant.

I was discussing a no payment at all situation where you walk in and walk out without having to interact with a payment tool. Payment is integrated in the whole experience.
