As someone who grew up vegetarian and tasted meat afterwards, I feel it's hard for me to understand the attachment of people to meat. I was recommended to add some meat and eggs as a dietary measure along with supplements. It wasn't as flavorful as I expected it to be. I liked Indian meat dishes a bit but if you substituted meat with tofu or paneer (cottage cheese), you wouldn't notice much of an improvement. Veggies certainly feel more flavorful combined with spices. Meat/tofu/cottage cheese only gives it structure. Although that might be the nature of Indian recipes.
