Your comment just inspired a flurry of research on my end which resulted in purchasing a $200 air-fryer pressure-cooker combo (highly unusual behavior for my scrupulous self). Stock. If you don’t care about crystal clear stock then a pressure cooker can do it in like 10% of the time needed on the stove.
