No one knows for sure yet. The most convincing theory I've heard is that it actually is fat... But fat is an umbrella term. Saturated fat is (almost certainly) benign; eat as much (or as little) as you want. Omega-6 and omega-3 polyunsaturated fats, on the other hand, are precursors to an important class of hormones called eicosanoids. If you eat too few, too much, or the wrong ratios, you will run into problems.
