WHO has details [1] about the carcinogenic impacts of animal meat consumption. There's nothing of that sort for any plant-based burgers. The arguments in these types of articles seem to ignore what I think are more serious health risks from animal proteins. And animals don't subsist on air. In terms of 'processed', the types of nutrients fed to factory-farmed animals are terrible, including massive amounts of antibiotics.
