We still have not heard anything officially from Apple.
Based on other comments here, this removal happened via Malware Removal Tool (MRT) which itself is a hidden tool. If yes, then Apple needs to declare Zoom as Malware. For reference, Apple defines Malware here - https://support.apple.com/en-in/guide/mac-help/mh27449/10.14....
