Interesting thing I learned recently is it's pronounced "sick", at least according to the world Sikh council [1]. I always thought it was "seek".

Well, it's "Sick" with an aspirated "k", which is what the "kh" is for. "Seek" is just mangled pronunciation like "goo-roo" for "guru".
