The immigration stuff may request you to plug in some usb cable for “scanning”. This is done in sample base. Depends on how much you trust the China authority, you may or may not want to reset password/reflash stock rom/throw away the phone

Does this happen if you’re just laying over in China as well? Planning on flying through China to Thailand.

This has never happened to me at all regardless of how I was passing through.

No. This mostly happened on people who go to North West part of China.
