I imagine that whoever paid you a ton of money might not be happy afterwards. I also imagine they're not the type of people you want to make unhappy.
Well, your payment could be part of a contract where they would only give you the money if Apple doesn't patch the bug in the next n days
Contracts only matter if they are enforceable by law. If a contract involves illegal activity, it is invalid.
There are many kinds of contracts. The contract implied above could be "cross us and find you and your family disappear", not "we sue you in court".
