This was the style of interview I ran. I usually picked snippets from an open source project. I usually grabbed pull requests that fixed bugs.

Have them delve through it. Reason aloud, ask questions about it. See how they gain context, and how they troubleshoot. The biggest down side was they sometimes need to reference external projects, or documentation. I would often have to search on my work laptop and then let them should surf the docs.
