I don't think landing page with an email subscription is an MVP. Many people have done it and it definitely helps in gathering an audience and get your initial users, but it won't help you in understanding your product. Product is more than just users saying ok to try a product. It's about the will to pay or engagement. I think a working product with minimal core features can be called an MVP.
