OpenTable has been around for almost 20 years now. Is there a reason why online accessible databases for booking aren't the norm now?

If I want to book a haircut, or a Drs appointment, or a hockey rink, is there a technological barrier that's preventing a company from creating easily implemented online booking calendars?
