Any of you use a lightweight desktop environment like on high end expensive system. Why? Does it matter if you end up using lightweight desktop environment on a low end system and end up using resource intensive apps on top of it?

Those things aren't lightweight only in the matter of resources used - they're also lightweight in how much attention they demand when interacting with them. Some people just want a simpler flow with less overhead.
Less space for the DE's configuration to get screwed up and start getting in your way.
I tend towards lightweight anything just because I'm so fed up with the ridiculous complexity all around us. I take pride in understanding what every process on my systems actually does, and why it is necessary.

Lightweight anything is also a good idea security-wise (reduction of the Trusted Computing Base).

I recently switch to Mate (the Gnome2 fork), because it requires less memory than Ubuntu Unity and Gnome3. My old laptop has 4GB RAM it I often its the limit when compiling stuff and maybe running a VM.
