I find this idea really interesting. Personally, I believe cloud computing is the future of our interaction with technology, and making it super easy for anyone to use can be a lot of help. Keen to see if this one will get traction.

That's exactly our vision. Cloud computing is a technology already available and well widespread. However, it still takes some technical knowledge to set up or to understand most solutions.

We want to make it so simple that people can launch applications with only one click.

Fastr is going to be a simple launcher where people can easily launch the software they want in a cloud server.

It will also automatically scale, taking all the set up stress away from the end user.

This sounds like citrix

Why should people think your service is any different from those in the past?

Audience. Citrix is focused on entrerprises, while we want to focus on individuals. The technology / tool itself is nothing new. We want to make it easily accessible for common, non-technical people.
But citrix is bad, its way too complex to implement well for the benefit so essentially all installations are too slow to use effectively. That sounds to me like you're taking advantage of people who don't know better
It's hard for me to believe it'd work well for interaction-heavy apps.

But if state were kept in sync with a version in the cloud, offloading some processing (say - video encoding) would be neat.

That's kind of what we want to do for some applications - video editing is a good example, because having to transfer heavy files is a big challenge.

But for our MVP, we simply stream the entire application.
