A lot of minimum wage jobs struggle to hire enough employees. When I worked at Subway as a kid, the schedule was always a mess and many times people didn't show up for a shift or abandoned the job completely. These types of jobs can benefit from hiring disabled people because they are often a lot more consistent. I know of one disabled employee at my local gym who has been there for many years, and he has a much more regular schedule than anyone else there.
